Ingredients

  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups bone broth
  • 2 cups diced carrots
  • Salt and pepper, to taste

Instructions

  1. Set your Instant Pot to the sauté setting and add the olive oil.
  2. Once the oil is hot, add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the wild rice, vegetable broth, bone broth, and carrots to the pot and stir to combine.
  4. Secure the lid and set the Instant Pot to manual high pressure for 20 minutes.
  5. Once the timer goes off, quick-release the pressure and open the lid.
  6. Season with salt and pepper to taste, and serve.

Notes:

For a creamier soup, try adding a cup of half-and-half at the end of cooking. You can also use any other type of broth, such as chicken or beef, in place of the vegetable and bone broths.
